Luís Fernando de Sousa Moraes received his nutrition degree at the Universidade Federal de Viçosa (UFV). Mr. Moraes has been working on celiac disease and intestinal microbiota since 2011. At the moment, he is a doctorate student at the same institution. His interests cover nutrition, microbiota, and probiotics under different clinical conditions, such as celiac disease, obesity, and type II diabetes.
